We had a crayfish molt...THAT was gross!!! My son kept the shell and finally I told him it had to go...it dried out pretty well but it looked like a dead crayfish laying on his headboard/bookshelf.

Here's a bit of bamboo shrimp knowledge for you...
My shrimp was hanging out on the tops of plants and on the air hoses, trying to get as close to the surface as possible. At times, parts of his body were actually out of the water.
I read somewhere that bamboo shrimp were extremely sensitive to dissolved oxygen levels in the water and lo and behold, my water was about 80 degrees - my heater wasn't working right.
Bought a new heater and digital thermometer and have been running my tank between 77.5 and 78.0F for the last several days and he hasn't been within 6 inches of the surface since.

Wow, neat. Like a canary in a mine! Nice catch - you're absolutely right. He molted again today, BTW.

Bringing this back to the top to answer my original question...
We put the bamboo shrimp in a 3G betta tank so that I could treat the 55G with meds. After a day we decided maybe it was a good idea to just leave him there - he's happy, eating, and we won't have to worry about moving him in the future.
Since we committed to a "shrimp only" tank long-term, I went and bought 4 ghost shrimp. They've been peacefully co-existing for the last several days and are very fun to watch!
